To extract the elegant rosé color and full aromatic richness of Pinot Noir, the duration of skin maceration is absolutely crucial. It is said that Edouard Leclerc, the first cellar master, slept next to the tanks to avoid missing the perfect moment!

    Ageing:

After bottle fermentation, the wine matured on the lees for around 5 years. Disgorgement was followed by a dosage of 8 g/l.

    Soil:

    Calcareous marl and chalk

    Vinification:

The grapes were destemmed and vinified separately by parcel, then gently pressed after around three days of maceration. The pale pink musts fermented under temperature control into dry base wines, which were briefly matured on the fine lees. The final blend was created by assembling these with selected reserve wines. The cuvée was then bottled with the tirage liqueur (a sugar and yeast mixture) to initiate the second fermentation and the 'prise en mousse# according to the traditional method.
