Peter Sisseck was born in Copenhagen in 1962. After graduating in oenology from the University of Bordeaux, he gained valuable experience alongside his uncle, Peter Vinding-Diers, at renowned wineries in Bordeaux and California. In 1990, he became chief winemaker at the prestigious Hacienda Monasterio, yet his greatest dream remained creating his own winery to produce a wine reflecting his personal vision. In 1995, this dream became reality: He purchased old Tempranillo vineyards in the village of La Horra in Ribera del Duero and founded Dominio de Pingus—named after his childhood nickname "Pingus." He described these over 60-year-old Tempranillo vines as "perfect"—vineyards untouched by fertilizers or pesticides. Sisseck’s philosophy emphasizes uncompromising excellence and nature-friendly viticulture with profound respect for the environment. Initially organic, the estate fully converted to biodynamic methods in 2000. Dominio de Pingus has been officially Demeter-certified since 2015.
