The 19 hectares of vineyards at Corte Pavone are used almost exclusively to grow Sangiovese grapes. The vines are exposed in different directions and there are several different soil types, all strongly characterized by Galestro, a dark shale. The complexity of the vineyard allows us to produce Rosso di Montalcino, single vineyard Brunello and also Spumante.
They capture the individuality of each vineyard, select the best grapes for each product and thus produce an extraordinary quality of wine. They follow this concept in particular for the Brunelli vineyards and select individual vineyards exclusively to produce certain wines, such as the Brunello Crus „Fiore del Vento“ and „Poggio Molino al Vento“.
To capture the uniqueness of each site, it is not only about selecting a single vineyard, also the individual wine making is an important part. Each wine gets the opportunity to develop their character and therefore they interfere as little as possible in their natural fermentation and process. This is especially important for the Brunello Cru, so they can express their individual terroir and character.
