Weingut Paul Achs

Weingut Paul Achs is located 60 kilometers south of Vienna, in the Burgenland town of Gols, between the Neusiedler See (Lake Neusiedl) and the Hungarian border. Approximately 22 hectares are culivated - these are divided into 42 different vineyards. Weingut Paul Achs focuses on red wines and dry white wines. Chardonnay and Sauvignon Blanc lead the white wine line. For red wines, domestic varieties such as Zweigelt, Blaufränkisch, St. Laurent and Pinot Noir are vinified, as is the international variety, Syrah. The grapes are harvested solely by hand for their protection as well as to guarantee the best selection. "As a winemaker, I transmit what has taken place – without inventing things, without making up anything. My work is to give structure to the essence of wine with the means that I have – I'd rather give something up than to use anything that's possible. This means no artificial adding of tannins or acidity, no over-farming. It means sustainability in thinking and in doing. The wine must taste how it really is – not how it could be. And therefore, the direction towards biodynamics is a logical consequence."
