    The base wines were fermented in stainless steel tanks with in-house cultivated yeast strains, followed by a fully completed malolactic fermentation.

    After re-fermentation in the bottle aged for around 3 years in the deep chalk cellars, the "Crayères" on the yeast and, after disgorging, refined with a light dosage.
