      Various harvest times because of the diffrent sites between the end of September and the middle of October. 5% of grapes dried in the vineyard (on the vine).

      Vinification:

      Destemming, traditional fermentation on the skins in stainless steel tanks at controlled temperature. De-juicing of about 30% to create a more extreme skin/must ratio and enhance extraction. The dried berries are vinified separately and added at the end of vinification.

      Ageing:

      All the lots of each variety are then blended in the proportion of the available quantity of the vintage (no assembly per system) and aged in barrique barrels for almlost 2 years.
